Cheesy Chicken Orzo Casserole

Ingredients

  • 2 cups cooked orzo pasta
  • 1 pound diced boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 chopped onion
  • 2 minced garlic cloves
  • 1 cup broccoli florets
  • 1 cup halved cherry tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Chopped fresh parsley for garnish

Method

  1. Preheat oven to 375°F.
  2. Cook orzo according to package directions until al dente. Drain and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt, pepper, and Italian seasoning. Cook 5-7 minutes until browned and cooked through.
  4. Add chopped onion and minced garlic to skillet, sauté 2-3 minutes until onion is translucent.
  5. Stir in broccoli florets and cherry tomatoes; cook an additional 3-4 minutes until vegetables are tender.
  6. In a large mixing bowl, combine cooked orzo, chicken mixture, and chicken broth. Mix well.
  7. Transfer mixture to a greased 9x13 inch baking dish. Top with shredded mozzarella and grated Parmesan cheese.
  8. Bake 25-30 minutes until cheese is bubbly and golden brown.
  9. Remove from oven and cool slightly. Garnish with fresh parsley before serving.
