Cheesy Chicken Orzo Casserole

Ingredients
- 2 cups cooked orzo pasta
- 1 pound diced boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 chopped onion
- 2 minced garlic cloves
- 1 cup broccoli florets
- 1 cup halved cherry tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Chopped fresh parsley for garnish
Method
- Preheat oven to 375°F.
- Cook orzo according to package directions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt, pepper, and Italian seasoning. Cook 5-7 minutes until browned and cooked through.
- Add chopped onion and minced garlic to skillet, sauté 2-3 minutes until onion is translucent.
- Stir in broccoli florets and cherry tomatoes; cook an additional 3-4 minutes until vegetables are tender.
- In a large mixing bowl, combine cooked orzo, chicken mixture, and chicken broth. Mix well.
- Transfer mixture to a greased 9x13 inch baking dish. Top with shredded mozzarella and grated Parmesan cheese.
- Bake 25-30 minutes until cheese is bubbly and golden brown.
- Remove from oven and cool slightly. Garnish with fresh parsley before serving.
