Cheesy BBQ Chicken Sliders

Ingredients

  • 12 count Hawaiian Original Rolls
  • Olive oil
  • 1 lb chicken breast, cut into cubes
  • 1/2 tsp each salt and pepper
  • 1 tsp each paprika, onion powder, garlic powder, and Italian seasoning
  • 1 cup shredded mozzarella cheese
  • BBQ sauce
  • 1 cup shredded Colby Jack cheese
  • 6 pieces of bacon, cooked and crumbled
  • Crispy onions
  • 2 tbsp butter
  • 1/2 tsp each garlic powder and dried parsley

Method

  1. Heat a large skillet over medium-high heat with a drizzle of olive oil.
  2. Add cubed chicken breast and season with salt, pepper, paprika, onion powder, garlic powder, and Italian seasoning.
  3. Cook, stirring occasionally, until chicken reaches an internal temperature of 165°F.
  4. Slice the Hawaiian rolls in half, keeping the bottoms connected as one slab.
  5. Layer shredded mozzarella cheese over the bottom half of the rolls, then top with the cooked chicken.
  6. Drizzle BBQ sauce over the chicken, then sprinkle with shredded Colby Jack cheese, crumbled bacon, and crispy onions.
  7. Place the top half of the rolls over the filling.
  8. Melt the butter and stir in garlic powder and dried parsley, then brush over the tops of the sliders.
  9. Bake at 350°F for 10-15 minutes, until cheese is melted and tops are golden.
  10. Slice into individual sliders and serve.
