Ground Beef and Potatoes Casserole

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 4–5 medium potatoes, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1½ cups shredded cheddar cheese, divided
  • 2 tbsp chopped parsley or green onions, optional

Method

  1. Preheat oven to 375°F and lightly grease a 9x13-inch baking dish.
  2. Cook ground beef in olive oil in a large skillet for 6-8 minutes until browned, then drain excess grease.
  3. Add onion and cook 3-4 minutes until softened; stir in garlic and cook 30 seconds more.
  4. Whisk together the mushroom soup, milk, salt, pepper, and paprika until smooth.
  5. Layer half the sliced potatoes in the baking dish, then top with the beef mixture and 1 cup of cheddar.
  6. Add the remaining potatoes on top and pour the sauce evenly over everything.
  7. Cover tightly with foil and bake 40 minutes until potatoes begin to soften.
  8. Uncover, sprinkle with remaining cheddar, and bake 15-20 minutes more until potatoes are fork-tender and cheese is golden.
  9. Let rest 5 minutes, garnish with parsley or green onions, and serve hot.
