Cheesy Ground Beef Garlic Bread Subs

Ingredients
- 4 hoagie rolls or sub rolls
- 1 lb (450 g) lean ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and black pepper, to taste
- 2 cups shredded mozzarella cheese
- ½ cup shredded provolone or cheddar cheese (optional)
- 2 tbsp chopped fresh parsley
- ¼ cup unsalted butter, melted
- 1 tbsp chopped fresh parsley
Method
- Preheat the oven to 375°F.
- In a large skillet, heat the olive oil over medium heat and cook the onion and bell pepper for 3-4 minutes until softened.
- Add the garlic and cook for about 30 seconds, then add the ground beef, breaking it up and cooking until browned. Drain excess fat.
- Season the beef mixture with Italian seasoning, garlic powder, paprika, salt, and pepper.
- Combine the melted butter with minced garlic and parsley to make the garlic butter.
- Slice the hoagie rolls lengthwise without cutting all the way through, and brush the insides generously with the garlic butter.
- Fill each roll with the beef mixture, then top with mozzarella and provolone or cheddar, if using.
- Arrange the filled rolls on a baking sheet and bake for 10-12 minutes until the cheese is melted and bubbly.
- Broil for 1-2 minutes until the tops are lightly golden.
- Garnish with fresh parsley and serve immediately.
