Cheesy Ground Beef Garlic Bread Subs

Ingredients

  • 4 hoagie rolls or sub rolls
  • 1 lb (450 g) lean ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 2 cups shredded mozzarella cheese
  • ½ cup shredded provolone or cheddar cheese (optional)
  • 2 tbsp chopped fresh parsley
  • ¼ cup unsalted butter, melted
  • 1 tbsp chopped fresh parsley

Method

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat the olive oil over medium heat and cook the onion and bell pepper for 3-4 minutes until softened.
  3. Add the garlic and cook for about 30 seconds, then add the ground beef, breaking it up and cooking until browned. Drain excess fat.
  4. Season the beef mixture with Italian seasoning, garlic powder, paprika, salt, and pepper.
  5. Combine the melted butter with minced garlic and parsley to make the garlic butter.
  6. Slice the hoagie rolls lengthwise without cutting all the way through, and brush the insides generously with the garlic butter.
  7. Fill each roll with the beef mixture, then top with mozzarella and provolone or cheddar, if using.
  8. Arrange the filled rolls on a baking sheet and bake for 10-12 minutes until the cheese is melted and bubbly.
  9. Broil for 1-2 minutes until the tops are lightly golden.
  10. Garnish with fresh parsley and serve immediately.
