Chocolate Cookies & Cream Dipped Cookies

Ingredients

  • 1 cup salted butter (melted, room temperature. you can use unsalted if you prefer.)
  • 1 ¼ cups granulated sugar
  • ¾ cup light brown sugar (packed down)
  • 1 tsp vanilla extract
  • 2 eggs (room temperature)
  • 1 ⅔ cup all-purpose flour
  • 2 tsp corn starch
  • 1 cup natural cocoa powder
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • 6 Hershey's Cookies 'n' Creme bars

Method

  1. Beat melted butter, granulated sugar, brown sugar, and vanilla together on medium speed for about a minute.
  2. Add eggs and mix on low just until combined.
  3. Add flour, cornstarch, cocoa powder, baking soda, and salt, mixing on low until just incorporated.
  4. Scoop dough into 20 balls (about 2-2.5 tablespoons each) onto a parchment-lined sheet, then chill at least 30 minutes (longer or frozen is fine and helps them bake thicker).
  5. Preheat oven to 350°F. Arrange chilled dough balls 2 inches apart and bake 10-12 minutes until edges are set.
  6. Cool cookies on the pan for 3 minutes, then move to a wire rack. While still warm, use a round cutter or bowl to gently reshape each cookie into a neat circle.
  7. Break the Cookies 'n' Creme bars into pieces and melt in the microwave in short bursts, stirring between each, until smooth.
  8. Spoon melted chocolate onto wax paper and press a cooled cookie on top so the bottom is coated. Repeat with remaining cookies, rewarming chocolate as needed.
  9. Let the chocolate set completely, then peel the cookies off the wax paper and serve.
