Slow Cooker Chicken and Gravy

Ingredients
- 1 1/2 pounds chicken boneless skinless chicken breasts or thighs
- 4 cups low-sodium chicken broth
- 1/2 cup arrowroot starch or corn starch
- salt and pepper
- 1 1/2 teaspoons salt (or more)
- 1 1/2 teaspoons onion powder
- 1 1/2 teaspoons garlic powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon pepper
Method
- Whisk the broth, starch, salt, pepper, garlic powder, onion powder, and thyme together in the slow cooker until smooth and lump-free.
- Season the chicken well with salt and pepper, then place it into the slow cooker.
- Cover and cook on high for 3 to 4 hours, or on low for 6 to 8 hours, until the chicken is fully cooked.
- Remove the chicken, shred it with two forks, and stir it back into the gravy before serving.
