Chicken Pot Pie

Chicken Pot Pie

Ingredients

  • 1½ cups cooked chicken, shredded or diced
  • 1 refrigerated pie crust
  • 1 cup mixed vegetables (peas, carrots & corn)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • ¾ cup chicken broth
  • ¼ cup heavy cream

Method

  1. Preheat the oven to 400°F.
  2. Melt the butter in a saucepan over medium heat, then whisk in the flour to form a paste.
  3. Slowly pour in the chicken broth while whisking, then add the heavy cream, and simmer until thickened.
  4. Stir in the cooked chicken and mixed vegetables until well coated in the sauce.
  5. Pour the filling into a pie dish and cover with the pie crust, sealing and trimming the edges.
  6. Cut a few slits in the top crust to vent steam.
  7. Bake for about 30-35 minutes, until the crust is golden brown.
  8. Let the pie rest for a few minutes before serving.
