Chicken Pot Pie

Ingredients
- 1½ cups cooked chicken, shredded or diced
- 1 refrigerated pie crust
- 1 cup mixed vegetables (peas, carrots & corn)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- ¾ cup chicken broth
- ¼ cup heavy cream
Method
- Preheat the oven to 400°F.
- Melt the butter in a saucepan over medium heat, then whisk in the flour to form a paste.
- Slowly pour in the chicken broth while whisking, then add the heavy cream, and simmer until thickened.
- Stir in the cooked chicken and mixed vegetables until well coated in the sauce.
- Pour the filling into a pie dish and cover with the pie crust, sealing and trimming the edges.
- Cut a few slits in the top crust to vent steam.
- Bake for about 30-35 minutes, until the crust is golden brown.
- Let the pie rest for a few minutes before serving.
