Slow Cooker Amish Ground Beef Noodle Casserole

Ingredients

  • 1 lb ground beef
  • 8 oz egg noodles
  • 1 small onion, diced
  • 1 can (10.5 oz) condensed tomato soup
  • 1 cup beef broth
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp black pepper
  • Salt, to taste
  • Fresh parsley, optional

Method

  1. Cook the ground beef and diced onion in a skillet over medium heat until browned and cooked through; drain excess fat.
  2. Move the beef mixture to a slow cooker and stir in the tomato soup, beef broth, garlic powder, paprika, black pepper, and salt.
  3. Cover and cook on low for 3 to 4 hours.
  4. Near the end of cooking, prepare the egg noodles separately according to package directions, then drain.
  5. Stir the sour cream into the slow cooker mixture until smooth.
  6. Fold the cooked noodles into the beef mixture.
  7. Sprinkle the cheddar cheese over the top, cover, and let sit for 10 to 15 minutes until melted.
  8. Garnish with fresh parsley if desired and serve hot.
