Crockpot Creamy Chicken & Noodles

Ingredients

  • 1 lb chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp oregano
  • 1/2 tsp thyme
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp minced garlic
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 small diced onion
  • 10 oz can cream of chicken soup
  • 1 cup chicken broth
  • 8-10 oz medium egg noodles
  • 1/2 cup heavy cream

Method

  1. Dice the onion and chop the celery and carrots into small pieces.
  2. Coat the crockpot with cooking spray and place the chicken breasts inside.
  3. Season the chicken with salt, pepper, oregano, thyme, paprika, garlic powder, and onion powder, then add the minced garlic.
  4. Add the chopped onion, carrots, and celery to the crockpot.
  5. Pour in the cream of chicken soup and chicken broth, then stir to combine.
  6. Cover and cook on low for about 6 hours, until the chicken is cooked through and the vegetables are tender.
  7. Cook the egg noodles according to package directions and drain well.
  8. Remove the chicken, cube or shred it, then return it to the crockpot and stir.
  9. Mix in the cooked noodles and heavy cream.
  10. Top with dried parsley and adjust seasoning with salt and pepper before serving.
