Crispy Cheeseburger Tacos

Ingredients

  • Avocado oil spray
  • Tortillas of choice
  • Shredded cheddar cheese
  • Extra virgin olive oil
  • 3/4 cup finely diced onion
  • 1 lb lean ground beef (90/10)
  • SPG Rub (salt, pepper, garlic)
  • 2 tbsp worcesire sauce
  • 2 tbsp bbq sauce
  • 2 tbsp yellow mustard
  • 2 tbsp ketchup
  • 1/3 cup finely diced pickles
  • 3/4 cup mayo
  • 3 tbsp finely diced pickles
  • 3 tbsp finely diced onions
  • Seasonings: SPG & paprika to taste

Method

  1. Mix all burger sauce ingredients together and refrigerate until ready to serve.
  2. Heat olive oil in a large skillet over medium-high heat. Cook diced onions for 5-7 minutes, stirring occasionally.
  3. Add ground beef to the skillet, breaking it apart, and let it sear undisturbed for a few minutes to develop a crust.
  4. Continue breaking up the beef, then stir in the seasoning and remaining beef mixture ingredients (worcestershire, bbq sauce, mustard, ketchup, pickles). Cook until beef is done to your preference, then remove from heat.
  5. Heat a separate large skillet over medium-low heat and coat with avocado oil spray.
  6. Place tortillas in the skillet, layer with cheese, the cooked beef mixture, and more cheese, then fold closed.
  7. Cook tacos for 2-3 minutes per side until both sides are golden and crispy. Repeat with remaining tortillas and filling.
  8. Serve tacos with the chilled burger sauce.
