Classic Churros

Ingredients
- 250 ml de agua (1 cup water)
- 50 g de mantequilla sin sal (3.5 tablespoons unsalted butter)
- 3 g de sal fina (1/2 teaspoon fine salt)
- 10 g de azúcar (2.5 teaspoons sugar)
- 150 g de harina multiusos (1 1/4 cups all-purpose flour)
- 2 huevos medianos, a temperatura ambiente
- 1 cucharadita de vainilla (opcional)
- Aceite para freír
- Azúcar y canela para cubrir
Method
- In a saucepan, combine the water, butter, salt, and sugar, and bring to a boil.
- Remove from heat and add the flour all at once, stirring vigorously until a smooth dough forms.
- Let the dough cool slightly, then beat in the eggs one at a time until fully incorporated and glossy.
- Stir in the vanilla extract if using.
- Transfer the dough to a piping bag fitted with a star tip.
- Heat oil in a deep pot to about 350°F (175°C).
- Pipe strips of dough directly into the hot oil, cutting with scissors or a knife, and fry until golden and crisp, turning occasionally.
- Remove churros with a slotted spoon and drain on paper towels.
- While still warm, roll the churros in a mixture of sugar and cinnamon to coat.
- Serve immediately.
