Mexican Taco Meatloaf

Ingredients
- 1 lb ground beef
- 1/2 cup shredded cheddar cheese
- 1/4 cup salsa
- 1 large egg
- 1 small onion, finely chopped
- 1 packet taco seasoning
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro (optional)
Method
- Preheat the oven to 375°F.
- In a large bowl, combine ground beef, cheese, salsa, egg, onion, taco seasoning, breadcrumbs, salt, and pepper. Mix until just combined.
- Stir in cilantro if using.
- Shape the mixture into a loaf and place in a baking dish or loaf pan.
- Bake for about 40-45 minutes, until cooked through and internal temperature reaches 160°F.
- Let rest a few minutes before slicing and serving.
