Mexican Taco Meatloaf

Mexican Taco Meatloaf

Ingredients

  • 1 lb ground beef
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup salsa
  • 1 large egg
  • 1 small onion, finely chopped
  • 1 packet taco seasoning
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro (optional)

Method

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine ground beef, cheese, salsa, egg, onion, taco seasoning, breadcrumbs, salt, and pepper. Mix until just combined.
  3. Stir in cilantro if using.
  4. Shape the mixture into a loaf and place in a baking dish or loaf pan.
  5. Bake for about 40-45 minutes, until cooked through and internal temperature reaches 160°F.
  6. Let rest a few minutes before slicing and serving.
