Dump-and-Bake Chicken Tzatziki

Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup Greek yogurt
- 1 medium cucumber, grated
- 2 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1 teaspoon dried dill
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1 cup cherry tomatoes, halved
- 1 red onion, sliced
- 1/2 cup feta cheese, crumbled
- Fresh parsley, for garnish
Method
- Mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper in a bowl until smooth.
- Cover and chill the tzatziki sauce for at least 30 minutes to let the flavors combine.
- Preheat the oven to 400°F.
- Arrange chicken breasts in a single layer in a large baking dish.
- Drizzle chicken with olive oil and season with paprika, cumin, salt, and pepper.
- Scatter cherry tomatoes and red onion slices around the chicken.
- Cover the dish with foil and bake for 25 minutes.
- Remove foil, top with crumbled feta, and bake uncovered for another 10-15 minutes until chicken reaches 165°F and feta is lightly golden.
- Let the dish rest for about 5 minutes after baking.
- Stir the chilled tzatziki sauce again before serving.
- Plate chicken with roasted tomatoes and onions, then top generously with tzatziki sauce.
- Garnish with fresh parsley before serving.
