Apple Fritters

Ingredients
- 1 tbsp Lemon Juice
- 1 cup Flour
- 6 tbsp Sugar
- 1 tsp Cinnamon
- 1/4 tsp Salt
- 1 1/2 tsp Baking Powder
- 10 tbsp Milk (divided)
- 1 Egg
- 3 Apples (peeled, cored, and finely diced)
- Oil for frying (about 2/3 cup depending on pan)
- 2 cup Powdered Sugar
- 1/4 tsp Vanilla
Method
- Toss diced apples with lemon juice in a bowl and set aside.
- Whisk together flour, sugar, cinnamon, salt, and baking powder in a bowl.
- In a separate small bowl, whisk 5 tablespoons of the milk with the egg.
- Pour the wet mixture into the dry ingredients and stir just until combined.
- Fold the diced apples into the batter.
- Heat oil in a heavy pot or deep skillet over medium-high heat to 375°F.
- Drop spoonfuls of batter carefully into the hot oil.
- Fry, turning occasionally, until golden brown on all sides, about 3 minutes.
- Remove fritters and drain on a wire rack set over paper towels.
- Let the oil return to temperature before frying the next batch.
- Whisk together powdered sugar, vanilla, and remaining milk to make a glaze.
- Drizzle or dip fritters in the glaze, then let set on the rack.
