Old Fashioned Chicken and Dumplings

Ingredients
- 64 oz Chicken Broth
- 1 Onion (finely diced)
- 3 Chicken Breasts
- 2 cup Flour
- 1/2 tsp Baking Powder
- 2 tbsp Butter (cold)
- 1 cup Milk
- Salt and Pepper (to taste)
Method
- Combine chicken, onion, and broth in a pot.
- Bring to a boil, then simmer about 15 minutes until chicken reaches 165°F internal temperature.
- Remove chicken, shred with two forks, and set aside.
- Whisk together flour and baking powder in a bowl.
- Cut cold butter into small pieces and work into the flour mixture with a fork or pastry cutter until crumbly.
- Stir in milk until a dough forms.
- Turn dough onto a floured surface and roll out to about 1/4-inch thickness, adding flour as needed to prevent sticking.
- Cut the dough into squares using a knife or pizza cutter.
- Bring the broth back to a boil.
- Add dumpling squares to the boiling broth one at a time, dusting with flour if they stick together.
- Stir occasionally as dumplings cook.
- Simmer dumplings for 10-15 minutes, tasting to ensure they are fully cooked and not doughy.
- Reduce heat to medium, stir in shredded chicken, and simmer a few more minutes until heated through.
