Homemade Crispy Chicken Nuggets

Ingredients
- 500 g (1.1 lb) boneless chicken breast
- 1 egg
- 1 tsp salt
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp white pepper
- ½ tbsp cornstarch
- 1–2 tbsp ice water
- ½ cup (60 g) all-purpose flour
- ¼ cup (30 g) cornstarch
- ½ cup (60 g) cornstarch
- ½ tsp baking powder
- ½ tsp paprika powder
- 1 cup (180–200 ml) ice water
Method
- Blend the chicken breast with ice water until smooth.
- Mix in the egg, salt, garlic powder, onion powder, white pepper, and cornstarch until combined.
- Portion the mixture into 18–20 gram nuggets and freeze for 30–60 minutes to firm up.
- Combine the flour and cornstarch for the dredge in a shallow dish.
- Whisk together the flour, cornstarch, baking powder, salt, paprika, garlic powder, onion powder, and ice water to make the wet batter.
- Coat each frozen nugget in the dredge, then dip into the wet batter.
- Fry at 340–350°F until the nuggets are cooked through.
- Fry a second time until golden brown and crispy, then drain and serve.
