Homemade Crispy Chicken Nuggets

Ingredients

  • 500 g (1.1 lb) boneless chicken breast
  • 1 egg
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp white pepper
  • ½ tbsp cornstarch
  • 1–2 tbsp ice water
  • ½ cup (60 g) all-purpose flour
  • ¼ cup (30 g) cornstarch
  • ½ cup (60 g) cornstarch
  • ½ tsp baking powder
  • ½ tsp paprika powder
  • 1 cup (180–200 ml) ice water

Method

  1. Blend the chicken breast with ice water until smooth.
  2. Mix in the egg, salt, garlic powder, onion powder, white pepper, and cornstarch until combined.
  3. Portion the mixture into 18–20 gram nuggets and freeze for 30–60 minutes to firm up.
  4. Combine the flour and cornstarch for the dredge in a shallow dish.
  5. Whisk together the flour, cornstarch, baking powder, salt, paprika, garlic powder, onion powder, and ice water to make the wet batter.
  6. Coat each frozen nugget in the dredge, then dip into the wet batter.
  7. Fry at 340–350°F until the nuggets are cooked through.
  8. Fry a second time until golden brown and crispy, then drain and serve.
