Chinese Lemon Chicken

Ingredients
- 1 lb chicken thighs (cut into cubes)
- 1 tbsp soy sauce
- 2 tbsp cornstarch
- 1/3 c lemon juice
- 3 tbsp sugar
- 1/2 c water
- 2 tsp cornstarch
- 1 tsp lemon zest
- 1/4 c flour
- 1/2 c cornstarch
- oil for frying
Method
- Toss chicken cubes with soy sauce and 2 tablespoons cornstarch in a bowl, cover, and marinate for 30 minutes.
- While chicken marinates, whisk together lemon juice, sugar, water, 2 teaspoons cornstarch, and lemon zest in a small bowl; set aside.
- Add flour and remaining 1/2 cup cornstarch to the marinated chicken and toss to coat evenly.
- Heat about 3 inches of oil in a pot over medium-high heat to 350°F.
- Fry chicken in small batches to avoid crowding, which can cause sticking and oily results from temperature drops.
- Fry until golden brown, then transfer cooked pieces to a skillet.
- Once all chicken is fried, turn off the frying oil and heat the skillet with the chicken over medium-high heat; add the sauce.
- Toss chicken in the sauce and cook briefly until it thickens.
- Serve immediately with steamed rice and vegetables.
