Reese's Peanut Butter Cookies

Ingredients
- 1 3/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter (room temperature)
- 3/4 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 (8 oz) bag mini Reese's peanut butter cups
- 18 full-size Reese's peanut butter cups (unwrapped)
Method
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Whisk together the flour, baking soda, and salt in a bowl; set aside.
- In a stand mixer, beat butter, peanut butter, and both sugars until light and fluffy. Mix in the egg and vanilla.
- Gradually mix in the flour mixture on low speed until a dough forms, then fold in the mini peanut butter cups by hand.
- Scoop about 2 heaping tablespoons of dough per cookie, roll into balls, flatten slightly into disks, and place on the prepared baking sheets.
- Bake 10-12 minutes until the edges are set. Immediately press a full-size peanut butter cup into the center of each hot cookie.
- Cool the cookies on the baking sheet for 10 minutes, then move to a wire rack to cool completely; chill in the fridge if you want the chocolate to firm up faster.
