Stovetop Tuscan Chicken

Ingredients

  • White Rice (48 oz)
  • Chicken Breast Tenderloins (About 1lb)
  • Spinach (8 oz)
  • Grape Tomatoes (10 oz)
  • Cream Cheese (8 oz)
  • Mozzarella Cheese (8 oz)

Method

  1. Season the chicken tenderloins on both sides with your preferred seasonings.
  2. Heat a large skillet over medium heat with a drizzle of olive oil or butter.
  3. Cook the chicken for 4-5 minutes per side until golden and cooked through, then remove and set aside.
  4. In the same skillet, add a little more oil if needed and cook the spinach until wilted.
  5. Stir in the cream cheese and mix until melted and smooth.
  6. Add the tomatoes and stir until well combined with the creamy sauce.
  7. Return the chicken to the skillet, spoon the sauce over each piece, and top with mozzarella.
  8. Cover and simmer on low for 3-5 minutes until the cheese melts and the sauce thickens.
