Stovetop Tuscan Chicken

Ingredients
- White Rice (48 oz)
- Chicken Breast Tenderloins (About 1lb)
- Spinach (8 oz)
- Grape Tomatoes (10 oz)
- Cream Cheese (8 oz)
- Mozzarella Cheese (8 oz)
Method
- Season the chicken tenderloins on both sides with your preferred seasonings.
- Heat a large skillet over medium heat with a drizzle of olive oil or butter.
- Cook the chicken for 4-5 minutes per side until golden and cooked through, then remove and set aside.
- In the same skillet, add a little more oil if needed and cook the spinach until wilted.
- Stir in the cream cheese and mix until melted and smooth.
- Add the tomatoes and stir until well combined with the creamy sauce.
- Return the chicken to the skillet, spoon the sauce over each piece, and top with mozzarella.
- Cover and simmer on low for 3-5 minutes until the cheese melts and the sauce thickens.
