Cheese Sauce Mix

Ingredients

  • 2 cup dry milk powder
  • 1 cup powdered cheese (cheddar or nacho-style)
  • 1/2 cup cornstarch
  • 2 tablespoon butter powder (optional, but adds richness)
  • 2 teaspoon dry mustard powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne (optional for kick)

Method

  1. Combine all dry ingredients and store in an airtight container in a cool, dry place for up to 6-9 months.
  2. To make sauce, whisk 1/2 cup of the mix with 1 cup cold water or milk in a small saucepan.
  3. Cook over medium heat, stirring constantly, until thickened and creamy, about 4-6 minutes.
  4. Use in mac and cheese, over vegetables or baked potatoes, in casseroles or rice dishes, or thin with extra liquid for nacho sauce.
