30-Minute Seafood Boil

Ingredients
- 1 gallon water
- 1/4 cup Zatarain's crab boil mix (or Old Bay seasoning plus 2 Tbsp salt)
- 2 lemons, juiced
- 1 onion, quartered
- 1 lb smoked sausage
- 2 lb red potatoes
- lobster tails, if desired
- 4 ears of corn
- 2 lb crab legs
- 2 lb shrimp
- 1 lb mussels
- 8 oz little neck clams
- melted butter for serving
- lemon wedges for serving
- Cajun seasoning for serving
- Tajin for serving
- red pepper flakes for serving
Method
- Combine the water, seafood boil seasoning, lemon juice, and onion in a large pot and bring to a boil.
- Add the smoked sausage and cook for 3 minutes.
- Add the red potatoes and cook for 15 minutes.
- If using lobster tails, add them now and cook for 5 minutes.
- Add the corn and cook for 3 minutes.
- Add the crab legs, shrimp, mussels, and clams. Cover and cook for 3-5 minutes, until the shrimp are cooked through and shells open.
- Strain the solids from the pot, reserving the liquid to use as a shellfish stock base with the leftover shells.
- Serve the boil with melted butter, lemon wedges, and seasonings like Cajun seasoning, Tajin, and red pepper flakes on the side so guests can season to taste.
