Grinder Salad Sandwiches

Ingredients
- 1/2 cup of mayo
- 2 TBSP of red wine vinegar
- 1/2 tsp of salt
- 1 tsp of dried oregano
- 1 tsp of Italian seasoning
- 1 tsp of garlic powder
- 1/2 tsp of red pepper flakes
- 1/3 cup pepperoncinis peppers drained
- 1/3 cup of shredded Parmesan cheese
- 8 oz shredded iceberg lettuce
- 1/2 of a red onion thinly sliced
- Sandwich bread
- Ham
- Salami
- Pepperoni
- Provolone
- 1 lb bacon, cooked
- Sliced tomato
Method
- In a large bowl, whisk together the mayo, red wine vinegar, salt, oregano, Italian seasoning, garlic powder, and red pepper flakes.
- Stir in the pepperoncini peppers, Parmesan cheese, sliced red onion, and shredded lettuce. Set aside to let the flavors meld while assembling the sandwiches.
- Preheat the oven to 400°F. Arrange bread slices on a baking sheet, top each with a couple slices of provolone and your choice of deli meats (ham, salami, pepperoni).
- Bake for a few minutes until the cheese melts.
- Top the sandwiches with extra Parmesan, cooked bacon, and salt-and-pepper seasoned tomato slices.
- Finish with a generous scoop of the grinder salad mixture and serve immediately.
