Grinder Salad Sandwiches

Ingredients

  • 1/2 cup of mayo
  • 2 TBSP of red wine vinegar
  • 1/2 tsp of salt
  • 1 tsp of dried oregano
  • 1 tsp of Italian seasoning
  • 1 tsp of garlic powder
  • 1/2 tsp of red pepper flakes
  • 1/3 cup pepperoncinis peppers drained
  • 1/3 cup of shredded Parmesan cheese
  • 8 oz shredded iceberg lettuce
  • 1/2 of a red onion thinly sliced
  • Sandwich bread
  • Ham
  • Salami
  • Pepperoni
  • Provolone
  • 1 lb bacon, cooked
  • Sliced tomato

Method

  1. In a large bowl, whisk together the mayo, red wine vinegar, salt, oregano, Italian seasoning, garlic powder, and red pepper flakes.
  2. Stir in the pepperoncini peppers, Parmesan cheese, sliced red onion, and shredded lettuce. Set aside to let the flavors meld while assembling the sandwiches.
  3. Preheat the oven to 400°F. Arrange bread slices on a baking sheet, top each with a couple slices of provolone and your choice of deli meats (ham, salami, pepperoni).
  4. Bake for a few minutes until the cheese melts.
  5. Top the sandwiches with extra Parmesan, cooked bacon, and salt-and-pepper seasoned tomato slices.
  6. Finish with a generous scoop of the grinder salad mixture and serve immediately.
