Yaki Sauce (Teriyaki-Style)

Ingredients

  • 1 Cup soy sauce
  • 1/2 cup water
  • 1/2 cup brown sugar
  • 4 cloves garlic
  • 3 scallions
  • 1 inch knob ginger
  • 2 Tbsp rice vinegar
  • 1 Tbsp sesame oil
  • Slurry - 1 Tbsp corn starch + 1 Tbsp water (use 1 tbsp)

Method

  1. Mince the garlic, ginger, and scallions.
  2. Combine soy sauce, water, brown sugar, garlic, ginger, scallions, rice vinegar, and sesame oil in a saucepan.
  3. Bring the mixture to a simmer over medium heat, stirring occasionally.
  4. In a small bowl, mix the cornstarch with water to form a slurry.
  5. Add about 1 tablespoon of the slurry to the simmering sauce, stirring constantly until thickened.
  6. Simmer for a few more minutes until the sauce reaches a glossy, thick consistency.
  7. Remove from heat and strain if a smooth sauce is desired, or use as is.
  8. Cool and store, or use immediately over your favorite protein or noodles.
