Yaki Sauce (Teriyaki-Style)

Ingredients
- 1 Cup soy sauce
- 1/2 cup water
- 1/2 cup brown sugar
- 4 cloves garlic
- 3 scallions
- 1 inch knob ginger
- 2 Tbsp rice vinegar
- 1 Tbsp sesame oil
- Slurry - 1 Tbsp corn starch + 1 Tbsp water (use 1 tbsp)
Method
- Mince the garlic, ginger, and scallions.
- Combine soy sauce, water, brown sugar, garlic, ginger, scallions, rice vinegar, and sesame oil in a saucepan.
- Bring the mixture to a simmer over medium heat, stirring occasionally.
- In a small bowl, mix the cornstarch with water to form a slurry.
- Add about 1 tablespoon of the slurry to the simmering sauce, stirring constantly until thickened.
- Simmer for a few more minutes until the sauce reaches a glossy, thick consistency.
- Remove from heat and strain if a smooth sauce is desired, or use as is.
- Cool and store, or use immediately over your favorite protein or noodles.
