Loaded Tater Tot Breakfast Casserole

Ingredients

  • 1 lb beef breakfast sausage
  • 16 oz sharp cheddar cheese, shredded
  • 1 (20 oz) bag frozen tater tots
  • 6 slices beef bacon, cooked and crumbled
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tsp all-purpose seasoning
  • 1 tsp chicken bouillon powder
  • ½ tsp red pepper flakes (optional)
  • 5 large eggs
  • 1½ cups whole milk or half-and-half
  • Chopped fresh chives, for garnish

Method

  1. Preheat oven to 375°F and lightly grease a 9x13-inch baking dish.
  2. Cook the beef bacon in a skillet until crispy, then remove, crumble, and set aside.
  3. In the same skillet, brown the beef breakfast sausage, breaking it into crumbles.
  4. Add diced onion and bell peppers to the skillet and cook 4-5 minutes until softened.
  5. Stir in the all-purpose seasoning, bouillon powder, and red pepper flakes, then remove from heat.
  6. Transfer the sausage mixture to a large bowl and mix in half of the tater tots and half of the cheddar cheese.
  7. In a separate bowl, whisk together the eggs and milk until smooth.
  8. Spread the tater tot and sausage mixture into the prepared baking dish, then pour the egg mixture evenly over the top.
  9. Top with the remaining tater tots and sprinkle with the remaining cheddar cheese.
  10. Cover with foil and bake 30 minutes.
  11. Uncover and bake another 20-25 minutes until the tater tots are crispy and the eggs are set.
  12. Garnish with the crumbled beef bacon and chopped chives before serving.
