Loaded Tater Tot Breakfast Casserole

Ingredients
- 1 lb beef breakfast sausage
- 16 oz sharp cheddar cheese, shredded
- 1 (20 oz) bag frozen tater tots
- 6 slices beef bacon, cooked and crumbled
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 tsp all-purpose seasoning
- 1 tsp chicken bouillon powder
- ½ tsp red pepper flakes (optional)
- 5 large eggs
- 1½ cups whole milk or half-and-half
- Chopped fresh chives, for garnish
Method
- Preheat oven to 375°F and lightly grease a 9x13-inch baking dish.
- Cook the beef bacon in a skillet until crispy, then remove, crumble, and set aside.
- In the same skillet, brown the beef breakfast sausage, breaking it into crumbles.
- Add diced onion and bell peppers to the skillet and cook 4-5 minutes until softened.
- Stir in the all-purpose seasoning, bouillon powder, and red pepper flakes, then remove from heat.
- Transfer the sausage mixture to a large bowl and mix in half of the tater tots and half of the cheddar cheese.
- In a separate bowl, whisk together the eggs and milk until smooth.
- Spread the tater tot and sausage mixture into the prepared baking dish, then pour the egg mixture evenly over the top.
- Top with the remaining tater tots and sprinkle with the remaining cheddar cheese.
- Cover with foil and bake 30 minutes.
- Uncover and bake another 20-25 minutes until the tater tots are crispy and the eggs are set.
- Garnish with the crumbled beef bacon and chopped chives before serving.
