Chicken Bacon Ranch Potato Casserole

Ingredients
- 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 lbs baby potatoes, halved (or russet potatoes cut into 1-inch cubes)
- 2 tablespoons avocado oil
- 1 (1 oz) packet ranch seasoning mix
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 tablespoon Kinders Caramelized Onion Butter Burger Seasoning
- 2 cups shredded cheddar cheese
- 8 slices bacon, cooked and crumbled
- Chopped parsley, for garnish (optional)
Method
- Preheat oven to 385°F and lightly grease a 9x13-inch baking dish.
- In a large bowl, toss the cubed chicken and potatoes with the avocado oil, ranch seasoning, garlic powder, onion powder, black pepper, and the Kinders seasoning until evenly coated.
- Spread the mixture into the prepared dish in an even layer.
- Bake uncovered for about 45 minutes, until the chicken is cooked through and potatoes are fork tender.
- Remove from the oven and top evenly with shredded cheddar and crumbled bacon.
- Bake for another 10 minutes, until the cheese is melted and bubbly.
- Garnish with chopped parsley if desired, and serve warm.
