Mixed Fajitas (Steak, Chicken & Shrimp)

Ingredients
- 2lbs chicken breast
- 2lbs New York steak
- 2lbs shrimp
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 1 whole onion
- 2 serrano peppers
- 2 Roma tomatoes
- 1 tbsp Lawrys seasoned salt (for steak)
- 1 tbsp chicken seasoning (Chef Mérito)
- 1 tbsp Slap Ya Mama Cajun seasoning
- 1 tsp garlic powder (x3 batches)
- 1 tsp black pepper (x3 batches)
- 1 tsp chili powder (x3 batches)
- 1 tsp paprika (x3 batches)
- 1/8 tsp ground cumin (x3 batches)
- 1/4 packet of fajita seasoning (x3 batches)
- splash of orange juice (used 3 times)
- splash of avocado oil (used 3 times)
Method
- Slice the peppers, onion, and all three meats into thin strips.
- In separate bowls, season the steak, chicken, and shrimp each with garlic powder, black pepper, chili powder, paprika, cumin, and a quarter packet of fajita seasoning.
- Add the steak's own seasoning (Lawry's seasoned salt), the chicken's own seasoning (chicken seasoning), and the shrimp's own seasoning (Cajun seasoning) to their respective bowls.
- Splash each bowl with avocado oil and orange juice, then mix to coat.
- Heat a pan or griddle over medium-high heat until very hot.
- Cook the steak first for about 4-5 minutes until charred, then remove.
- Cook the chicken for about 7 minutes until cooked through and charred.
- Cook the shrimp for about 4 minutes until opaque and charred.
- Sauté the peppers, onion, and tomatoes for about 12 minutes until softened and charred.
- Combine the cooked meats, shrimp, and vegetables together and serve hot.
