Honey Chipotle Bowl

Ingredients
- 1 can pinto beans, rinsed and drained
- 1 Red onion, diced
- 1 pint Cherry tomatoes, quartered
- 2 bell peppers, diced
- 1 bunch of Cilantro, chopped
- 1 can of corn, drained and cooked
- 1 pound of chicken, tossed in Cajun seasoning and baked at 375°F for 25 minutes (or until cooked through) and cubed
- 2 avocados, cubed
- 6 tbs red wine vinegar
- 3 tbs honey
- 3/4c olive oil
- 1tsp oregano
- 1/2tsp cumin
- 2tsp salt
- 1/2tsp pepper
- 2 chipotle peppers
- 3 garlic cloves
- chicken tossed in Cajun seasoning
Method
- Toss chicken in cajun seasoning and bake at 375°F for about 25 minutes, or until fully cooked through.
- While chicken cooks, dice the onion and bell peppers, quarter the cherry tomatoes, chop the cilantro, and cube the avocados.
- Drain and cook the corn, and rinse and drain the pinto beans.
- Cube the cooked chicken once cooled slightly.
- Make the dressing by blending red wine vinegar, honey, olive oil, oregano, cumin, salt, pepper, chipotle peppers, and garlic cloves until smooth.
- Assemble bowls with beans, onion, tomatoes, bell peppers, cilantro, corn, chicken, and avocado.
- Drizzle with the chipotle vinaigrette before serving.
