Maple Pecan Oatmeal Cookies

Ingredients

  • 1 cup gluten-free all purpose flour (or regular flour)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 cup butter, softened (or coconut oil, or dairy-free butter alternative)
  • 1/4 cup brown sugar (or coconut sugar)
  • 1/3 cup maple syrup
  • 1 tsp vanilla
  • 1 egg
  • 1 cup rolled oats (certified gluten-free)
  • 3/4 cup pecans (chopped)

Method

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper or nonstick spray.
  2. In a small bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In a large bowl, beat the butter and brown sugar together until creamy. Mix in the maple syrup and vanilla, then blend in the egg.
  4. Stir the dry ingredients into the wet mixture until combined. Gently fold in the oats and pecans. Let the dough rest for 10 minutes so the oats absorb moisture and the cookies don't spread too thin.
  5. Scoop dough into balls with a small cookie scoop and space evenly on the pans, about 12 per sheet. Flatten the tops slightly with a spatula.
  6. Bake for 10-12 minutes, until the tops are set and cooked through.
  7. Cool completely before serving.
