High-Protein Sweet Potato Beef Bowls with Creamy Sriracha Sauce

Ingredients

  • 1 medium sweet potato, finely diced
  • 1 tsp olive oil (for sweet potato)
  • 2 tsp onion powder (for sweet potato)
  • 1 tsp chipotle powder (for sweet potato)
  • 1/2 tsp sweet paprika (for sweet potato)
  • salt and pepper, to taste (for sweet potato)
  • 1 lb lean ground beef (93/7)
  • 1 tsp olive oil (for beef)
  • 1 tbsp chipotle powder (for beef)
  • 1 tbsp onion powder (for beef)
  • 1 tbsp oregano (for beef)
  • 1 tbsp sweet paprika (for beef)
  • salt and pepper, to taste (for beef)
  • a large handful of finely shredded lettuce
  • 1/3 cup cottage cheese
  • 4 oz of cooked beef
  • half a small avocado
  • finely diced red onion
  • a handful of chopped cilantro
  • your favorite sauce (hot sauce or creamy sriracha sauce)
  • 2 tbsp mayonnaise
  • 1/4 cup sriracha
  • 2 tbsp rice vinegar
  • 1/2 tsp soy sauce
  • 2 tsp powdered monk fruit sweetener
  • the juice of 1 solid lime
  • 1 grated garlic clove
  • 1 thinly sliced scallion or a handful of chopped cilantro
  • some chili flakes, for topping
  • sesame seeds, for topping

Method

  1. Preheat the oven to 400°F. Finely dice the sweet potato so it cooks quickly, toss with olive oil, salt, pepper, onion powder, chipotle powder, and paprika, then roast on a tray for 22-25 minutes.
  2. In a pan, cook the ground beef in olive oil with salt, pepper, chipotle powder, onion powder, oregano, and paprika, breaking it into small pieces as it browns; cook 15-17 minutes until well browned and slightly crisp.
  3. Make the sauce by whisking together mayonnaise, sriracha, rice vinegar, soy sauce, monk fruit sweetener, lime juice, grated garlic, and scallion or cilantro; season with salt and pepper and adjust to taste.
  4. Divide the roasted sweet potato among 4 bowls or meal prep containers. Top each with shredded lettuce, cottage cheese, cooked beef, avocado, red onion, and cilantro.
  5. Drizzle with the sriracha sauce or hot sauce, then finish with extra veggies, chili flakes, and sesame seeds as desired.
