Felix's Brownies

Ingredients
- Brush melted butter on the baking tray
- Chop 1 cup (8oz) of chocolate into small bits
- ¼ cup Dutch cocoa powder
- 1 tbsp espresso powder (or instant coffee)
- 450g white sugar (about 2 1/4 cups)
- 112g brown sugar (about 1/2 cup)
- 2 tsp vanilla extract
- 1 tsp salt
- 250g (about 1 cup plus 1 tbsp) unsalted butter, melted
- 6 eggs
- 1 cup flour
- 1/2 cup cocoa powder
- a pinch of kosher salt, for topping
Method
- Brush melted butter over the baking tray, line with parchment paper, then brush with butter again.
- Chop the chocolate into small pieces and set aside.
- In a bowl, combine the dutch cocoa powder and espresso powder.
- Add the white sugar, brown sugar, vanilla extract, and salt to the bowl.
- Pour in the hot melted butter (after letting it cool for about 2 minutes) and mix well.
- Add the eggs and mix until combined.
- Sift the flour and cocoa powder into the mixture.
- Gently fold everything together with a spatula, pour into the prepared tray, and bake at 350°F for 20 minutes (or in an air fryer covered with foil at 320°F for 35 minutes).
- Finish the baked brownies with a pinch of kosher salt on top before serving.
