Felix's Brownies

Ingredients

  • Brush melted butter on the baking tray
  • Chop 1 cup (8oz) of chocolate into small bits
  • ¼ cup Dutch cocoa powder
  • 1 tbsp espresso powder (or instant coffee)
  • 450g white sugar (about 2 1/4 cups)
  • 112g brown sugar (about 1/2 cup)
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 250g (about 1 cup plus 1 tbsp) unsalted butter, melted
  • 6 eggs
  • 1 cup flour
  • 1/2 cup cocoa powder
  • a pinch of kosher salt, for topping

Method

  1. Brush melted butter over the baking tray, line with parchment paper, then brush with butter again.
  2. Chop the chocolate into small pieces and set aside.
  3. In a bowl, combine the dutch cocoa powder and espresso powder.
  4. Add the white sugar, brown sugar, vanilla extract, and salt to the bowl.
  5. Pour in the hot melted butter (after letting it cool for about 2 minutes) and mix well.
  6. Add the eggs and mix until combined.
  7. Sift the flour and cocoa powder into the mixture.
  8. Gently fold everything together with a spatula, pour into the prepared tray, and bake at 350°F for 20 minutes (or in an air fryer covered with foil at 320°F for 35 minutes).
  9. Finish the baked brownies with a pinch of kosher salt on top before serving.
