Oven-Browned Butter (Bulk Method)

Ingredients

  • 16 sticks butter (or more than 4 sticks for bulk batches)
  • optional liquid to replace moisture lost during browning (water, milk, coffee, fruit juice, etc)

Method

  1. Preheat oven to 350°F.
  2. Place butter sticks in a baking dish or pan suitable for the oven.
  3. Bake, checking periodically, until butter turns golden brown and smells nutty, about 25 minutes to 1 hour depending on quantity (roughly 15-20 minutes per pound); larger batches of 20+ sticks may take longer.
  4. Remove from oven once browned to desired color.
  5. Note that browning causes butter to lose moisture: 1 stick (4 oz) weighs about 4 oz before browning and about 3.2 oz after. To compensate in recipes, add extra liquid of choice or use extra butter to offset the loss.
  6. Use the browned butter hot, at room temperature, or chilled as needed.
