Ground Beef and Cabbage

Ingredients
- 1 Tbsp. cooking oil
- 1 large onion, sliced
- 1 lb. lean ground beef
- 2 tsp. paprika
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 Tbsp. tomato paste
- 1 (14.5 oz.) can diced tomatoes
- 1 tsp. caraway seeds (optional)
- 1 medium head cabbage
- 1 cup drained sauerkraut (optional)
Method
- Heat oil in a Dutch oven over medium heat. Add onion and cook until softened, about 2-3 minutes.
- Add ground beef, paprika, salt, and pepper. Raise heat to medium-high and cook, stirring occasionally, until beef is fully browned, about 4-5 minutes. Drain excess fat if desired.
- While the beef cooks, halve the cabbage, remove the core, and chop into 1-inch pieces.
- Stir tomato paste, diced tomatoes, and caraway seeds (if using) into the cooked beef. Add the cabbage and bring to a simmer, stirring occasionally.
- Cover, reduce heat to low, and cook until the cabbage is tender, about 8-10 minutes.
- Stir in sauerkraut, if using, and warm through for about 1 minute before serving.
