High Protein Dirty Cabbage Skillet

Ingredients

  • 2 lb 95–96% lean ground beef
  • 1 large green cabbage, chopped
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 tbsp diced yellow onion
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 1 cup chicken bone broth
  • 2 tsp smoked paprika, divided
  • ½ tsp salt, divided
  • ½ tsp black pepper, divided
  • Olive oil, about 1 tsp per serving

Method

  1. Brown the ground beef in a large skillet with half the smoked paprika, salt, and pepper.
  2. Add the onion and garlic, sauté a few minutes, then mix in the tomato paste and Worcestershire sauce.
  3. Add the chopped cabbage, bone broth, and remaining seasonings. Cover and simmer for 12-15 minutes.
  4. Stir in the bell peppers and cook uncovered for 5-7 minutes until vegetables are tender.
  5. Divide into four portions and drizzle each with a teaspoon of olive oil before serving.
