Unstuffed Pepper Skillet

Ingredients
- 1½ pounds ground beef
- 2 cups instant white rice
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- ½ yellow onion, diced
- 15 oz can tomato sauce
- 14.5 oz can petite diced tomatoes, drained
- Beef broth (enough to cook the rice per package instructions)
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 1 teaspoon Italian seasoning
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt and black pepper, to taste
Method
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and bell peppers, cooking until softened.
- Stir in minced garlic and cook briefly until fragrant.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Drain excess fat if needed, then season with Italian seasoning, onion powder, garlic powder, salt, and pepper.
- Pour in tomato sauce and drained diced tomatoes, stirring to combine.
- Add instant rice and enough beef broth to cook the rice according to package directions.
- Cover and simmer until rice is tender and liquid is mostly absorbed.
- Fluff with a fork and serve warm.
