Unstuffed Pepper Skillet

Ingredients

  • 1½ pounds ground beef
  • 2 cups instant white rice
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • ½ yellow onion, diced
  • 15 oz can tomato sauce
  • 14.5 oz can petite diced tomatoes, drained
  • Beef broth (enough to cook the rice per package instructions)
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste

Method

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and bell peppers, cooking until softened.
  3. Stir in minced garlic and cook briefly until fragrant.
  4. Add ground beef and cook until browned, breaking it apart as it cooks.
  5. Drain excess fat if needed, then season with Italian seasoning, onion powder, garlic powder, salt, and pepper.
  6. Pour in tomato sauce and drained diced tomatoes, stirring to combine.
  7. Add instant rice and enough beef broth to cook the rice according to package directions.
  8. Cover and simmer until rice is tender and liquid is mostly absorbed.
  9. Fluff with a fork and serve warm.
