Cheesy Queso Taco Pasta

Ingredients

  • 16 oz penne pasta
  • 2 tablespoons olive oil
  • 1 pound ground beef
  • ½ yellow onion, diced
  • 2 bell peppers, diced (any color)
  • 1 packet taco seasoning
  • 16 oz queso cheese dip (like Gordo's)
  • 1 (10 oz) can diced tomatoes with green chilies

Method

  1. Cook the penne pasta in salted boiling water until al dente, then drain and set aside.
  2. Heat olive oil in a large skillet or pot over medium-high heat.
  3. Add the ground beef, diced onion, and bell peppers, cooking until the beef is browned and vegetables are softened.
  4. Stir in the taco seasoning and cook briefly to coat the meat mixture.
  5. Add the diced tomatoes with green chilies and queso cheese dip, stirring until melted and combined.
  6. Fold in the cooked pasta and mix until fully coated in the cheesy sauce.
  7. Simmer a few minutes to heat through, then serve warm.
