Cheesy Queso Taco Pasta

Ingredients
- 16 oz penne pasta
- 2 tablespoons olive oil
- 1 pound ground beef
- ½ yellow onion, diced
- 2 bell peppers, diced (any color)
- 1 packet taco seasoning
- 16 oz queso cheese dip (like Gordo's)
- 1 (10 oz) can diced tomatoes with green chilies
Method
- Cook the penne pasta in salted boiling water until al dente, then drain and set aside.
- Heat olive oil in a large skillet or pot over medium-high heat.
- Add the ground beef, diced onion, and bell peppers, cooking until the beef is browned and vegetables are softened.
- Stir in the taco seasoning and cook briefly to coat the meat mixture.
- Add the diced tomatoes with green chilies and queso cheese dip, stirring until melted and combined.
- Fold in the cooked pasta and mix until fully coated in the cheesy sauce.
- Simmer a few minutes to heat through, then serve warm.
