Velveeta Beef Pasta with Bowtie Noodles

Ingredients
- 2.25 pounds ground beef
- 1 (8 oz) block of cream cheese, softened
- 1 big block of Velveeta cheese, cubed
- 1 can cream of chicken soup
- 1 can Rotel tomatoes with chilies, undrained
- 1 box bowtie noodles (farfalle)
- 1 cup pasta water, reserved to thin the sauce
Method
- Cook the bowtie noodles in salted boiling water until al dente, then drain, reserving 1 cup of the pasta water.
- While the pasta cooks, brown the ground beef in a large skillet or pot over medium-high heat, breaking it apart, then drain excess fat.
- Lower the heat and stir in the softened cream cheese, cubed Velveeta, cream of chicken soup, and undrained Rotel tomatoes until melted and combined.
- Add the reserved pasta water gradually to thin the sauce to your desired consistency.
- Fold the cooked pasta into the cheesy beef sauce and stir until evenly coated.
- Serve hot.
