Velveeta Beef Pasta with Bowtie Noodles

Ingredients

  • 2.25 pounds ground beef
  • 1 (8 oz) block of cream cheese, softened
  • 1 big block of Velveeta cheese, cubed
  • 1 can cream of chicken soup
  • 1 can Rotel tomatoes with chilies, undrained
  • 1 box bowtie noodles (farfalle)
  • 1 cup pasta water, reserved to thin the sauce

Method

  1. Cook the bowtie noodles in salted boiling water until al dente, then drain, reserving 1 cup of the pasta water.
  2. While the pasta cooks, brown the ground beef in a large skillet or pot over medium-high heat, breaking it apart, then drain excess fat.
  3. Lower the heat and stir in the softened cream cheese, cubed Velveeta, cream of chicken soup, and undrained Rotel tomatoes until melted and combined.
  4. Add the reserved pasta water gradually to thin the sauce to your desired consistency.
  5. Fold the cooked pasta into the cheesy beef sauce and stir until evenly coated.
  6. Serve hot.
