Buffalo Chicken Mac & Cheese

Buffalo Chicken Mac & Cheese

Ingredients

  • 1 lb elbow macaroni, cooked and drained
  • 2 large boneless, skinless chicken breasts
  • 1 jar mild buffalo wing sauce
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 tbsp caramelized onion butter seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper

Method

  1. Cook the elbow macaroni according to package directions, drain, and set aside.
  2. Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
  3. Cook the chicken until fully done, then shred or dice it.
  4. Toss the cooked chicken with the buffalo wing sauce until well coated.
  5. In a large pot or skillet, melt the cream cheese with the heavy cream over low heat, stirring until smooth.
  6. Stir in the mozzarella and cheddar cheeses along with the caramelized onion butter seasoning until melted and combined.
  7. Add the cooked macaroni and buffalo chicken to the cheese sauce, stirring until evenly coated.
  8. Warm everything through and serve hot.
