Taco Spaghetti

Ingredients
- 1 pound spaghetti noodles
- 2 pounds ground beef
- ½ yellow onion, diced
- 1 bell pepper, diced
- 2 tablespoons olive oil
- 1 packet taco seasoning
- 1 can (10 oz) tomatoes with green chilis (undrained)
- 1 cup sour cream
- 1 cup beef broth
- 2 cups shredded Mexican blend cheese
Method
- Cook the spaghetti noodles in salted boiling water until al dente, then drain.
- Heat olive oil in a large skillet over medium heat and sauté the diced onion and bell pepper until softened.
- Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks; drain excess fat.
- Stir in the taco seasoning, canned tomatoes with green chilis, and beef broth. Simmer for a few minutes to combine flavors.
- Reduce heat and mix in the sour cream until fully incorporated and creamy.
- Add the cooked spaghetti to the skillet and toss to coat evenly in the sauce.
- Sprinkle shredded cheese over the top, cover, and let it melt before serving.
