Chimichurri Sauce

Chimichurri Sauce

Ingredients

  • 1 bunch flat-leaf parsley, finely chopped
  • 1 bunch cilantro, finely chopped
  • 3 garlic cloves, minced
  • 2 tbsp finely minced onion
  • 2 tsp crushed red pepper flakes
  • 2 tbsp red wine vinegar (plus more to taste)
  • 1 cup extra-virgin olive oil
  • ½ cup avocado oil
  • Kosher salt
  • Freshly ground black pepper
  • 1 tsp dried oregano (optional)
  • Fresh lemon juice (optional)

Method

  1. Finely chop the parsley, cilantro, garlic, and onion.
  2. Combine the chopped herbs, garlic, and onion in a bowl.
  3. Season with kosher salt, black pepper, red pepper flakes, and oregano if using.
  4. Stir in the olive oil, avocado oil, and red wine vinegar until well combined.
  5. Let the mixture rest for at least 30 minutes so the flavors meld before serving.
  6. Spoon over grilled meats, seafood, or roasted vegetables.
