Chimichurri Sauce

Ingredients
- 1 bunch flat-leaf parsley, finely chopped
- 1 bunch cilantro, finely chopped
- 3 garlic cloves, minced
- 2 tbsp finely minced onion
- 2 tsp crushed red pepper flakes
- 2 tbsp red wine vinegar (plus more to taste)
- 1 cup extra-virgin olive oil
- ½ cup avocado oil
- Kosher salt
- Freshly ground black pepper
- 1 tsp dried oregano (optional)
- Fresh lemon juice (optional)
Method
- Finely chop the parsley, cilantro, garlic, and onion.
- Combine the chopped herbs, garlic, and onion in a bowl.
- Season with kosher salt, black pepper, red pepper flakes, and oregano if using.
- Stir in the olive oil, avocado oil, and red wine vinegar until well combined.
- Let the mixture rest for at least 30 minutes so the flavors meld before serving.
- Spoon over grilled meats, seafood, or roasted vegetables.
