Banana Bread Cinnamon Roll Cake

Ingredients
- 3 medium bananas, mashed
- ¾ cup salted butter, browned
- ¾ cup brown sugar
- ⅓ cup granulated sugar
- 2 large eggs
- ⅓ cup plain Greek yogurt
- 1½ tbsp vanilla
- 2¼ cups all-purpose flour
- 1½ tsp baking powder
- 1 tsp baking soda
- ¾ tsp salt
- 2 tbsp cinnamon
- ¼ cup brown sugar (for cinnamon swirl)
- 2 tbsp softened butter (for cinnamon swirl)
- 1 tbsp flour (for cinnamon swirl)
- 1½ tsp cinnamon (for cinnamon swirl)
- pinch of salt (for cinnamon swirl)
- 8 oz cream cheese, softened
- 4 tbsp browned butter, cooled
- 2 cups powdered sugar (adjust to taste)
- 1 tsp vanilla
- 1–2 tbsp heavy cream, as needed
- pinch of salt (for frosting)
- 3 tbsp browned butter (for topping)
- 3 tbsp brown sugar (for topping)
- 1–2 tbsp cinnamon (for topping)
- ¼ cup heavy cream (for topping)
Method
- Preheat the oven to 350°F and line an 8x8 or 9x9-inch square pan with parchment paper.
- Brown the butter for the cake and let it cool slightly.
- Whisk together the mashed bananas, browned butter, brown sugar, granulated sugar, eggs, Greek yogurt, and vanilla until smooth.
- Fold in the flour, baking powder, baking soda, salt, and cinnamon until just combined; avoid overmixing.
- Mix the cinnamon swirl ingredients (brown sugar, softened butter, flour, cinnamon, salt) in a small bowl.
- Spread half the cake batter into the prepared pan, dollop the cinnamon swirl mixture over it, then top with the remaining batter.
- Bake for 40-50 minutes, checking at 35 minutes, until a toothpick comes out with a few moist crumbs.
- Let the cake cool completely.
- Beat the browned butter and cream cheese until fluffy, then add powdered sugar, vanilla, heavy cream, and salt; beat until smooth and fluffy to make the frosting.
- Cook the browned butter, brown sugar, cinnamon, and heavy cream over medium-low heat until smooth and the sugar dissolves; cool until slightly thickened to make the cinnamon swirl topping.
- Spread the cream cheese frosting over the cooled cake.
- Spoon the cinnamon swirl topping over the frosting and swirl gently with a toothpick or butter knife.
