Banana Bread Cinnamon Roll Cake

Ingredients

  • 3 medium bananas, mashed
  • ¾ cup salted butter, browned
  • ¾ cup brown sugar
  • ⅓ cup granulated sugar
  • 2 large eggs
  • ⅓ cup plain Greek yogurt
  • 1½ tbsp vanilla
  • 2¼ cups all-purpose flour
  • 1½ tsp baking powder
  • 1 tsp baking soda
  • ¾ tsp salt
  • 2 tbsp cinnamon
  • ¼ cup brown sugar (for cinnamon swirl)
  • 2 tbsp softened butter (for cinnamon swirl)
  • 1 tbsp flour (for cinnamon swirl)
  • 1½ tsp cinnamon (for cinnamon swirl)
  • pinch of salt (for cinnamon swirl)
  • 8 oz cream cheese, softened
  • 4 tbsp browned butter, cooled
  • 2 cups powdered sugar (adjust to taste)
  • 1 tsp vanilla
  • 1–2 tbsp heavy cream, as needed
  • pinch of salt (for frosting)
  • 3 tbsp browned butter (for topping)
  • 3 tbsp brown sugar (for topping)
  • 1–2 tbsp cinnamon (for topping)
  • ¼ cup heavy cream (for topping)

Method

  1. Preheat the oven to 350°F and line an 8x8 or 9x9-inch square pan with parchment paper.
  2. Brown the butter for the cake and let it cool slightly.
  3. Whisk together the mashed bananas, browned butter, brown sugar, granulated sugar, eggs, Greek yogurt, and vanilla until smooth.
  4. Fold in the flour, baking powder, baking soda, salt, and cinnamon until just combined; avoid overmixing.
  5. Mix the cinnamon swirl ingredients (brown sugar, softened butter, flour, cinnamon, salt) in a small bowl.
  6. Spread half the cake batter into the prepared pan, dollop the cinnamon swirl mixture over it, then top with the remaining batter.
  7. Bake for 40-50 minutes, checking at 35 minutes, until a toothpick comes out with a few moist crumbs.
  8. Let the cake cool completely.
  9. Beat the browned butter and cream cheese until fluffy, then add powdered sugar, vanilla, heavy cream, and salt; beat until smooth and fluffy to make the frosting.
  10. Cook the browned butter, brown sugar, cinnamon, and heavy cream over medium-low heat until smooth and the sugar dissolves; cool until slightly thickened to make the cinnamon swirl topping.
  11. Spread the cream cheese frosting over the cooled cake.
  12. Spoon the cinnamon swirl topping over the frosting and swirl gently with a toothpick or butter knife.
