Korean Jujube and Ginger Tea

Korean Jujube and Ginger Tea

Ingredients

  • 400g of dried jujubes (about 2-3 cups)
  • *optional: 1 teaspoon of baking soda in water to fully clean jujubes
  • 100g of sliced ginger (about 3/4 cup)
  • 2.5L of water (about 10-12 cups, but add more if needed)

Method

  1. If desired, soak the dried jujubes briefly in water with a bit of baking soda to help clean them, then rinse well.
  2. Combine the cleaned jujubes, sliced ginger, and water in a large pot.
  3. Bring to a boil, then reduce heat and simmer uncovered for about 1 to 1.5 hours, until the liquid turns deep reddish-brown and fragrant.
  4. Add more water during simmering if the liquid reduces too much.
  5. Strain out the solids and serve the tea warm, or let cool and refrigerate for later.
