Costillitas en Salsa Verde (Beef Ribs in Green Sauce)

Ingredients
- 2 lbs costillas de res
- Sazonadas con sal
- pimienta
- ajo en polvo
- cebolla en polvo
- paprika
- comino
- aceite de cocina
- 3/4 cebolla cortadas en julianas
- 2 jalapeños cortados en julianas
- 10 tomatillos (asados)
- 2 dientes de ajo (asados)
- 1 chile jalapeño (asado)
- 1 chile guajillo (asado)
- Opcional para que quede mas picoso: chiles de arbol (asado)
- Sal
- Consume de pollo
- Cilantro
- 1/4 taza de agua
Method
- Season the beef ribs with salt, pepper, garlic powder, onion powder, paprika, cumin, and a splash of cooking oil; let them absorb the flavors.
- Sear the seasoned ribs in a hot pan or pot until browned on all sides.
- Add the sliced onion and jalapeño strips to the pot with the ribs and cook until softened.
- Roast the tomatillos, garlic, jalapeño, guajillo chile, and optional chiles de árbol until charred and softened.
- Blend the roasted vegetables with cilantro, water, salt, and chicken bouillon until smooth to make the salsa verde.
- Pour the salsa verde over the ribs, cover, and simmer until the meat is tender and cooked through.
- Garnish with fresh cilantro before serving.
- Serve with corn tortillas, pot beans, and cotija cheese.
