Cosido de Res (Beef Stew)

Ingredients

  • 2 lb beef stew meat
  • 4 cups water
  • 2 potatoes, chopped
  • 2 carrots, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tomato, chopped
  • 1 tsp salt, to taste
  • 1 tsp black pepper
  • 1 tsp cumin

Method

  1. Cut the beef into chunks and season with salt, pepper, and cumin.
  2. Sear the beef in a large pot until browned.
  3. Add onion, garlic, and tomato, and cook until softened.
  4. Pour in water and bring to a boil, then reduce heat and simmer until the meat is tender.
  5. Add potatoes and carrots, and continue cooking until the vegetables are soft.
  6. Adjust seasoning to taste and serve hot.
