Cosido de Res (Beef Stew)

Ingredients
- 2 lb beef stew meat
- 4 cups water
- 2 potatoes, chopped
- 2 carrots, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tomato, chopped
- 1 tsp salt, to taste
- 1 tsp black pepper
- 1 tsp cumin
Method
- Cut the beef into chunks and season with salt, pepper, and cumin.
- Sear the beef in a large pot until browned.
- Add onion, garlic, and tomato, and cook until softened.
- Pour in water and bring to a boil, then reduce heat and simmer until the meat is tender.
- Add potatoes and carrots, and continue cooking until the vegetables are soft.
- Adjust seasoning to taste and serve hot.
