Aguachile Rojo de Camarón (Red Shrimp Aguachile)

Ingredients
- 1 lb shrimp, peeled and deveined
- 4 limes, juiced
- 3 dried guajillo chiles, seeded
- 1 serrano chile
- 1/2 onion, sliced
- 1 cucumber, sliced
- 1/4 cup chopped cilantro
- 1 teaspoon salt, or to taste
- 1 avocado, sliced, for garnish
Method
- Butterfly the shrimp and lay them flat in a shallow dish.
- Rehydrate the guajillo chiles in hot water, then blend with lime juice, serrano chile, and salt to make the red sauce.
- Pour the red sauce over the shrimp, making sure they are fully coated.
- Let the shrimp marinate in the citrus mixture until they turn opaque, about 15-20 minutes.
- Add sliced onion and cucumber to the dish and mix gently.
- Garnish with chopped cilantro and sliced avocado before serving.
- Serve cold with tostadas or saltine crackers.
