Mediterranean Chicken Bowl with Pan-Fried Veggies and Tzatziki

Ingredients

  • 700g Chicken Thigh Fillets
  • 3 Tbsp Greek Yoghurt
  • Few Sprigs of Fresh Dill
  • 2 cloves of Garlic
  • 1 Tsp Paprika
  • 1 Tsp Cumin
  • 1 Lemon
  • Salt & Pepper
  • 1 Red Pepper
  • 1 Yellow Pepper
  • 1 Courgette
  • 1/2 Red Onion
  • 5 Tbsp Greek Yoghurt
  • 1/2 Cucumber
  • 1 Cups Uncooked Rice

Method

  1. In a bowl, mix chicken thighs with 3 tablespoons Greek yogurt, chopped dill, minced garlic, paprika, cumin, lemon juice, salt, and pepper. Let marinate briefly.
  2. Bake the marinated chicken at 400°F for 20-25 minutes, flipping halfway, or air fry at 400°F for 12-15 minutes, flipping halfway.
  3. While the chicken cooks, slice the peppers, courgette, and red onion, then pan-fry over medium-high heat until tender and lightly charred.
  4. Cook the rice according to package instructions.
  5. For the tzatziki, combine 5 tablespoons Greek yogurt with grated cucumber, chopped dill, and lemon juice; season to taste.
  6. Assemble bowls with rice, pan-fried veggies, sliced chicken, and a generous spoonful of tzatziki sauce.
