Mediterranean Chicken Bowl with Pan-Fried Veggies and Tzatziki

Ingredients
- 700g Chicken Thigh Fillets
- 3 Tbsp Greek Yoghurt
- Few Sprigs of Fresh Dill
- 2 cloves of Garlic
- 1 Tsp Paprika
- 1 Tsp Cumin
- 1 Lemon
- Salt & Pepper
- 1 Red Pepper
- 1 Yellow Pepper
- 1 Courgette
- 1/2 Red Onion
- 5 Tbsp Greek Yoghurt
- 1/2 Cucumber
- 1 Cups Uncooked Rice
Method
- In a bowl, mix chicken thighs with 3 tablespoons Greek yogurt, chopped dill, minced garlic, paprika, cumin, lemon juice, salt, and pepper. Let marinate briefly.
- Bake the marinated chicken at 400°F for 20-25 minutes, flipping halfway, or air fry at 400°F for 12-15 minutes, flipping halfway.
- While the chicken cooks, slice the peppers, courgette, and red onion, then pan-fry over medium-high heat until tender and lightly charred.
- Cook the rice according to package instructions.
- For the tzatziki, combine 5 tablespoons Greek yogurt with grated cucumber, chopped dill, and lemon juice; season to taste.
- Assemble bowls with rice, pan-fried veggies, sliced chicken, and a generous spoonful of tzatziki sauce.
