Perfectly Seared Herb & Garlic Lamb Chops

Ingredients
- 8–10 rib lamb chops
- 3 tbsp olive oil
- 4 cloves garlic, finely minced
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme, chopped
- 1 tbsp lemon juice
- 1 tsp coarse sea salt
- ½ tsp cracked black pepper
Method
- Pat the lamb chops dry with paper towels.
- Mix olive oil, garlic, parsley, rosemary, thyme, lemon juice, salt, and pepper in a small bowl to make a marinade.
- Coat both sides of each chop with the marinade and let sit at room temperature for 15–30 minutes.
- Heat a heavy or cast-iron skillet over high heat until very hot.
- Sear the chops 3–4 minutes per side for medium-rare, or until a crust forms and desired doneness is reached.
- Top with extra fresh herbs before serving.
