Perfectly Seared Herb & Garlic Lamb Chops

Ingredients

  • 8–10 rib lamb chops
  • 3 tbsp olive oil
  • 4 cloves garlic, finely minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp lemon juice
  • 1 tsp coarse sea salt
  • ½ tsp cracked black pepper

Method

  1. Pat the lamb chops dry with paper towels.
  2. Mix olive oil, garlic, parsley, rosemary, thyme, lemon juice, salt, and pepper in a small bowl to make a marinade.
  3. Coat both sides of each chop with the marinade and let sit at room temperature for 15–30 minutes.
  4. Heat a heavy or cast-iron skillet over high heat until very hot.
  5. Sear the chops 3–4 minutes per side for medium-rare, or until a crust forms and desired doneness is reached.
  6. Top with extra fresh herbs before serving.
