Roasted Salmon with Rosemary Potatoes & Broccolini

Ingredients
- 1lb of salmon
- 2-3 minced garlic cloves
- olive oil
- salt
- pepper
- lemon wedges
- gold potatoes steamed until just cooked
- paprika
- garlic powder
- fresh rosemary
- broletti (broccolini)
- tahini
- honey
- lemon juice
- dill
Method
- Preheat the oven to 400°F.
- Toss the salmon with minced garlic, olive oil, salt, and pepper; set aside with lemon wedges for serving.
- Par-cook the gold potatoes by steaming until just tender, then toss with olive oil, salt, pepper, paprika, garlic powder, and fresh rosemary.
- Toss the broccolini with olive oil, salt, and pepper.
- Arrange the salmon, seasoned potatoes, and broccolini on a sheet pan.
- Roast for 15-20 minutes, until the salmon is cooked through and the vegetables are tender.
- While the pan roasts, whisk together tahini, honey, lemon juice, dill, salt, and pepper to make the sauce.
- Serve the roasted salmon, potatoes, and broccolini drizzled with the lemon tahini sauce and lemon wedges on the side.
