Mango Marinated Chicken with Mango Salsa

Ingredients

  • 2 – 2.5 lbs. Boneless Skinless Chicken Thighs
  • 1 Cup Fresh Ripe Diced Mango
  • Juice of 1 Lime
  • 2 Tablespoons Olive oil
  • 1 ½ Tablespoon Honey
  • 1 ½ Teaspoon Garlic
  • 1 Teaspoon ginger Paste
  • 1 Teaspoon Salt
  • ½ Teaspoon Ground Cumin
  • ¼ Teaspoon Chili Powder
  • ¼ Teaspoon Paprika
  • 2 Cups Fresh Ripe Mango
  • 1 Red Bell Pepper (small diced)
  • ½ Small Red Onion (small diced)
  • 1 Jalapeno (halved, seeded, and minced)
  • ¼ Cup Cilantro (finely chopped)
  • Juice of ½ Lime
  • ¼ Teaspoon Salt
  • ¼ Teaspoon Honey

Method

  1. Combine all marinade ingredients (mango, lime juice, olive oil, honey, garlic, ginger paste, salt, cumin, chili powder, paprika) in a blender and blend until smooth.
  2. Pour the marinade over the chicken thighs, coating evenly, and refrigerate for at least 2 hours, up to 6-8 hours.
  3. Cook the marinated chicken on a grill, stovetop, or in the oven until fully cooked through.
  4. Mix together the mango salsa ingredients: mango, red bell pepper, red onion, jalapeno, cilantro, lime juice, salt, and honey.
  5. Serve the chicken with rice (cooked in chicken broth for extra flavor, if desired) and top with mango salsa.
