Tiramisu Banana Bread

Ingredients
- 3 medium ripe bananas, mashed
- ½ cup salted butter, browned (113g)
- ½ cup brown sugar (100g)
- ¼ cup granulated sugar (50g)
- 1 large egg, room temp
- ¼ cup plain greek yogurt (60g)
- 1 tbsp vanilla paste (13g)
- 2 cups all-purpose flour (240g)
- 1 tsp baking powder (4g)
- 1 tsp baking soda (5g)
- ½ tsp salt (3g)
- 2 tsp cinnamon
- 1 tbsp instant espresso powder (i used nescafé gold blonde)
- about 2 tbsp brown sugar, for espresso soak
- 1 tsp vanilla paste, for espresso soak
- a double shot of espresso
- 8 oz mascarpone
- 1 cup cold heavy cream
- ⅓ cup powdered sugar (add to taste)
- 1 tsp vanilla
- 1 tsp instant espresso
- cocoa powder, for dusting
Method
- Brown the butter in a pan and let it cool slightly.
- In a large bowl, whisk the mashed bananas with the browned butter, then mix in the brown sugar, granulated sugar, egg, greek yogurt, vanilla paste, and espresso powder until smooth.
- In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon, then fold into the wet mixture until just combined, being careful not to overmix.
- Pour the batter into a prepared loaf pan and bake at 375°F for 5 minutes, then reduce the oven temperature to 350°F and continue baking for 40-50 minutes, until a toothpick inserted in the center comes out clean.
- While the bread bakes, brew a double shot of espresso and stir in the brown sugar and vanilla paste until dissolved to make the soak.
- Once the bread is out of the oven, poke holes across the top with a skewer and slowly pour the espresso soak over the loaf, letting it absorb.
- Let the loaf cool completely before frosting.
- For the frosting, whip the mascarpone, heavy cream, powdered sugar, vanilla, and espresso powder together until thick and fluffy.
- Spread the frosting over the cooled loaf and finish with a dusting of cocoa powder.
