Shrimp Tostadas

Ingredients

  • 3 corn tostada shells
  • 1 lb large shrimp, peeled & deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cumin
  • Salt & black pepper, to taste
  • 2 ripe avocados
  • Juice of 1 lime
  • 2 tbsp chopped cilantro (plus more for garnish)
  • ¼ cup diced red onion
  • ¼ cup diced tomatoes
  • 2 tbsp mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp sriracha (or hot sauce)
  • Lime wedges, for serving

Method

  1. Mash the avocados with lime juice, cilantro, salt, and pepper until smooth and creamy.
  2. Toss the shrimp with olive oil, chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper.
  3. Cook the shrimp in a hot skillet for 2-3 minutes per side until browned and fully cooked.
  4. Whisk together mayonnaise, sour cream, and sriracha to make a spicy crema.
  5. Spread the mashed avocado mixture over each tostada shell.
  6. Top with cooked shrimp, diced tomatoes, red onion, and extra cilantro, then drizzle with the spicy crema.
  7. Squeeze fresh lime over the top and serve immediately.
